A Taste of a Kinder World

From regenerative farms to zero-waste kitchens, a new wave of chefs is proving that great food can also be good for people and the planet.

The restaurant imagined in this feature plans its weekly menu with nearby growers and uses preservation to manage seasonal abundance. Carrot tops become a condiment, surplus fruit becomes a drinking syrup and kitchen staff record what returns uneaten. Waste is examined as part of menu design.

The chef’s ambition is tested by flavour, cost and working conditions. A labour-intensive zero-waste dish is less convincing if its hidden cost falls on exhausted staff. The fictional kitchen therefore chooses methods that can be repeated comfortably, making a more considerate approach part of normal service rather than a special performance.
